One Shoe Granola

One-Shoe Granola is a family recipe that used to be called One-Cup Granola because it uses 1 cup of each ingredient.

The recipe was cleverly re-named One-Shoe by our cousin Ashley Lafond because of my mum’s trick to take one shoe off as a reminder to stir the granola every 10 minutes (the key to golden oats).

Yes, most people would use a timer, but if you met the infamous Dorion, taking one shoe off is more her style. (The same trick can be used for One-Shoe-Chicken)

Loaded with seeds and nuts, this Granola is naturally sweetened with honey and has a nice crunch. Use it with your favourite nut milk or atop smoothie bowls.

Ingredients

  • 6 cups gluten free oats
  • 1 cup whole raw almonds
  • 1 cup raw, unsalted sunflower seeds
  • 1 cup raw cashews
  • 1 cup raw pecans
  • 1 cup melted coconut oil
  • 1 cup melted honey
  • 1 cup skim milk powder or coconut milk powder

Make it like so…

  1. Heat oven to 325*
  2. In a small saucepan heat coconut oil and honey on medium low until liquid and transparent
  3. In a large roasting pan, combine the rest of the ingredients until throughly mixed
  4. Pour oil and honey mixture over the dry ingredients. Stir until well until all of the raw ingredients are coated and shiny
  5. Bake for 40 minutes stirring every 10 minutes unto golden but not brown. Optional: take one shoe off as a reminder to stir the oats every 10 minutes.

After 40 minutes the oats may still appear shiny and may not appear crisp, but once they cool they harden and you can break apart the Granola into bite sized chunks.

Store in an airtight container.
