Red peppers, orange carrots, yellow peppers, green zucchini, purple sweet potatoes, white carrots. Baked as is (no oil) at 400 for about 20 min, 35 min for the root veggies. Then drizzled with olive oil and a pinch of Himalayan salt when they cane out of the oven.
