Recipe} I bake so that I can know what I’m eating, I bake as a creative outlet and I bake to teach and get messy on the floor with my 1 year old. I almost never have the exact ingredients that a recipe calls for, but I improvise and somehow it turns out. Yes it takes about 3x longer baking with a 1 year old, but being able to watch her taste, feel and smell everything makes it all worth it.
👩🏻🍳Chocolate Banana Zucchini Muffin Recipe
2 eggs
2 ripe bananas
1/4 C @beekeepers_naturals cacao honey
1/3 C brown sugar
1-1/2 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
1/2 C cacao powder
1-1/2 C grated zucchini
3/4 C @bobsredmill GF flour
1/3 C oat flour
1/4 C coconut oil .
👩🏻🍳Topping
1 banana sliced into 12 slices
1/4 chopped pecans
1/2 C unsweetened shredded coconut .
👩🏻🍳Mix everything in one bowl, grease a muffin tin with coconut oil, add toppings and bake at 375 for 30-35 minutes.
