Pumpkin Chia Pudding

{Recipe} Pumpkin Chia Pudding 
1 can whole fat coconut milk
1/2 cup pumpkin purée 
1/4 cup chia seeds
2 tbsp maple syrup
1 tsp pumpkin pie spice
Mix, cover and refrigerate overnight.
Makes a little less than a litre and it goes quickly. Perfect for breakfast or really any time of day 🕰 
Disclaimer: I first tried making this in a mason jar, but I found it hard to mix the solid chunks of delicious fatty coconut. I now make it in a bowl and then transferred it to wide mouth mason jars the next day.
