Vegan Alfredo Sauce

Today’s day 7 of a candida cleanse. In an effort to starve the candida bacteria in my body which normally feeds off of sugar, refined foods, wheat, dairy and fruit, I’ve temporarily cut these foods out of my diet.

What do I eat then?

More greens, cruciferous veggies, lots of protein (nuts, eggs, fish, lamb, bison, grass fed beef) and a ton of water.

My motivation: to get rid allergy symptoms in my sinuses; clogged nose, puffy eyes, crackling in my ears.

So what do you do when you crave a rich and creamy sauce? You get creative! This was an experiment that turned out to be a hit. I tell ya, recipes like this make diets feel less constricting.

Recipe:

  • 1/2 cup Macadamia nuts. Substitute with cashews if you’d prefer
  • 1/2 cup water
  • 3 tbsp. Dijon mustard
  • 1 tbsp. Avocado oil (or Olive oil)
  • 1/2 tsp Himalayan Salt (or Sea Salt)

Blend until smooth. Serve over noodles of choice with 2 cloves chopped fresh garlic, a drizzle of olive oil and a splash of fresh lemon juice.

I used steamed Zucchini noodles (2 spiralized) on a bed of steamed chard and kale. You can get a spiralizer at your local Canadian Tire or Walmart for about $20, a great investment.
